This side dish is very easy to make and quite delicious. It goes well with any barbecued main course and is perfect for future hot days when you want a decent meal but don't have the energy. Ingredients:
12 large mushrooms |
2 small zucchini , bias sliced into 1 inch pieces |
3 tablespoons italian salad dressing |
2 tablespoons lemon juice |
1 teaspoon worcestershire sauce |
12 cherry tomatoes |
1/4 teaspoon salt |
Directions:
1. Preheat both sides of gas grill on high for 10 minutes 2. Pour boiling water over mushrooms. 3. Let stand 1 minute and then drain the mushrooms. 4. Thread mushrooms and zucchini onto 4 skewers. 5. Mix salad dressing, lemon juice, Worcestershire sauce, and 1/4 teaspoon salt. 6. Turn both sides of grill to medium. 7. Place skewers on grids. 8. Close hood and cook 12 minutes. 9. Turn and baste often. 10. Add tomatoes to skewers. 11. Grill 5 to 8 minutes more. 12. Baste often. |
