Italian Hearty Potato Cake |

Lots of different cheese in this one. Ingredients:
1 1/2 kg potatoes |
100 g butter |
100 g parmesan cheese, grated |
100 g pecorino cheese, grated |
4 tablespoons milk |
120 g ham, cubed |
250 g mozzarella cheese |
1 tablespoon parsley, chopped |
1 tablespoon basil |
4 egg yolks |
2 egg whites |
1/2 cup breadcrumbs |
pepper |
salt |
Directions:
1. Cook the potatoes. Mash them, add parmesan, pecorino, butter and milk. 2. Mix ham with egg yolks, parsley and basil and mix through the potato mash. Season with pepper and salt. 3. Beat the egg whites until stiff and spoon through the mash. 4. Butter a cake pan and sprinkle with breadcrumbs. 5. Spoon half of the puree in the pan. Make a hole in the middle of the mash, put mozarella slices into it. Spoon the rest of the mash on top. 6. Sprinkle with breadcrumbs and add some little cubes of better. 7. Bake for 40 minute at 180°C Leave to cool slightly and enjoy! |
