Italian Ground Beef Casserole |

The original was billed as a meatloaf, but my version is too soft to call a loaf. Bake it in a casserole dish and scoop it out with a big spoon. Delicious with parmesan sprinkled pierogies or tortellini. Ingredients:
3/4 cup dry breadcrumbs |
1 teaspoon italian seasoning mix |
1 teaspoon oregano |
1 teaspoon basil |
1 teaspoon garlic salt |
2 eggs |
1/4 cup ketchup |
14 ounces diced canned tomatoes, drained |
1 1/2 cups shredded mozzarella cheese |
1 1/2 lbs ground beef |
Directions:
1. Heat oven to 350. 2. Combine breadcrumbs and seasonings. 3. Add eggs, ketchup and diced tomatoes. Let stand about 5 minutes. 4. Add shredded cheese and ground beef. Mix gently. 5. Spread in 2 litre casserole dish. 6. Cover with tinfoil. 7. Bake about 1 hour. |
