This is a special cookie from my collection that is cut out with Christmas cookie cutters and fried (instead of baked) Ingredients:
6 cups flour |
1 tsp. sugar |
grated zest of 1 lemon |
grated zest of 1 orange |
8 eggs |
1 tsp. salt |
1 tbsp. heavy cream |
2 shots rum |
oil, for deep frying |
powdered sugar, for dusting |
Directions:
1. In a large bowl, mix all the ingredients; knead good and hard on a floured surface. Roll out to 3/8 thick and cut out with Christmas cookie cutters (star, bell, stocking, etc.). Fry in deep oil until golden brown. Drain on paper towels over paper grocery bags. Dust with powdered sugar. |
