Italian Grilled Zucchini and Red Onion |

A Cooking Light recipe that taste great as a leftover at room temperature. Ingredients:
1 tablespoon olive oil |
4 slices red onions |
2 lbs small zucchini |
1/2 teaspoon salt |
1/2 teaspoon fresh ground pepper |
2 tablespoons red wine vinegar |
1/3 cup fresh parmigiano-reggiano cheese |
2 tablespoons thinly sliced fresh mint |
Directions:
1. Prepare grill to medium-high heat. 2. Combine olive oil, red onion and zucchini (cut lengthwise) in a large bowl. Sprinkle zucchini mixture with half of the salt and pepper mixture, toss gently to coat. 3. Arrange vegetables in a single layer on a grill rack; grill 4 minutes on each side or until zucchini is tender and vegetables are well marked. 4. Remove zucchini from grill; reduce heat to medium-low. Grill onions an additional 5 minutes or until tender. 5. Combine zucchini, onion, and vinegar in a large bowl, tossing to coat. Sprinkle with remaining salt/pepper mixture, cheese, and mint. |
