Ingredients:
1 (16-ounce) package frozen italian-cut green beans |
vegetable cooking spray |
1 teaspoon olive oil |
1/4 cup chopped onion |
1/4 cup chopped green pepper |
1 clove garlic, minced |
1 (14 1/2-ounce) can no-salt-added diced tomatoes, undrained |
1/4 teaspoon dried italian seasoning |
1/4 teaspoon salt |
2 tablespoons freshly grated parmesan cheese |
Directions:
1. Cook green beans according to package directions, omitting salt and fat. Set aside, and keep warm. 2. Coat a nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion, green pepper, and garlic; saute 4 minutes. Stir in tomato, Italian seasoning, and salt. Cook until thoroughly heated, stirring often. Combine green beans and tomato mixture; toss lightly. Sprinkle with Parmesan cheese. |
