My family's favorite salad is the one from Olive Garden. So I found these recipes for the salad and dressing off the Internet, and added my own touches to it. Ingredients:
**salad |
1-2 bags italian salad mix (or a mix of lettuce with romain lettuce, not iceberg) |
4-5 slices red onion |
several large black olives (canned is fine, just rinse them before putting in salad) |
banana peppers |
croutons |
1 small tomato, cut into 8ths |
parmesan cheese |
**salad dressing |
1/3 cup olive oil |
2 tablespoons beaten egg |
1/3 cup white wine vinegar |
1 tablespoon lemon juice |
2 tablespoons corn syrup |
2 tablespoons parmesan cheese |
2 tablespoons romano cheese |
1/4 teaspoon garlic salt |
1/2 teaspoon italian seasoning |
1/2 teaspoon dried parsley |
add a little sugar to taste if too tart. |
Directions:
1. Chill big salad bowl in freezer for at least 30 minutes. 2. Slice red onion and tomato for salad. 3. Combine all of the dressing ingredients in blender and mix on low for about 30 seconds. 4. Pull bowl out of freezer and mix in salad mix, red onion, black olives, banana peppers, tomatoes and croutons. 5. Pour dressing over salad. Add freshly grated Parmesan cheese on top, and toss. 6. NOTE: If you don't like this recipe for the dressing, you can also go to Olive Garden and buy theirs for about 5 dollars. I like to add about a teaspoon of sugar to it before pouring over salad and tossing. |
