Italian Fried Eggplant-jewish Style

Melanzane alla Giudea: Fried Eggplant, perfect for Chaunkah . Either pan fry or deep fry
Ingredients:
small eggplants as desired ( 2 1/2 lb )
butter or oil to fry as needed
minced parsley as garnish
kosher salt or optional some garlic salt
Directions:
1. Prep does not cover stand time
2. Pare eggplant, cut in very thin slices. ( or into small cubes )
3. Sprinkle with salt, pile slices on a plate.
4. Cover with a weight to draw out juice; let stand one hour.
5. pat dry
6. Dredge slices with flour and fry slowly in a little butter until crisp and brown,
7. Or dip in egg and cracker and then fry in deep fat.
8. Garnish with fresh chopped parsley
