This is one of our favorite salads and very easy to make, which is good for me since I am salad impaired. Note: Some call this a Capri salad but that is made with slices or tomato and mozzarella. Mine reminds me of the Italian flag and is thusly named. Ingredients:
12 oz block of mozzarella cheese (fresh is better) |
10.5 oz pkg of cherry tomatoes |
.66 oz fresh basil |
olive oil |
freshly ground pepper |
pinch of salt |
Directions:
1. Cube mozzarella cheese and place in medium sized bowl. 2. Slice cherry tomatoes in half and place on top of cubed mozarella. 3. Either chiffonade the fresh basil or use a food processor to chop it. Throw it on top of all of the other ingredients in the bowl. 4. Pour just enough olive oil to coat the other ingredients. Use a spoon to mix everything evenly. 5. Place in refrigerator for about 1/2 an hour. 6. Season to taste 7. Enjoy! |
