Italian Eggplant and Ground Buffalo |

Just something I threw together that came out yummy. Would be extra good with fresh basil. Super easy! Ingredients:
1 lb ground buffalo meat |
1 eggplant, cubed |
1 sweet onion, cut in half, then sliced |
1 red bell pepper, cut in half, then 1/2 inch strips |
6 garlic cloves, minced |
1 large tomato, diced |
4 tablespoons olive oil |
1/2 teaspoon dried basil |
1/2 teaspoon italian seasoning |
salt |
1/2 cup fresh grated parmesan cheese |
Directions:
1. Heat oil in large pan over med-high heat 2. Saute eggplant, pepper, onion until soft. 3. Stir in garlic, cook 1 minute. 4. Stir in buffalo, cook until almost done. 5. Stir in tomatoes and seasonings and cook until meat is done. 6. Spoon into bowls and sprinkle parm on top. |
