Bake in hot oven (450) degrees 10 to 12 minutes. Makes 4 or 5 servings. Ingredients:
1 medium eggplant, pared and cut in 1/2-inch slices |
1/2 cup butter or margarine, melted |
3/4 cup fine dry bread crumbs |
1/4 teaspoon salt |
1 8- or 10 3/4-ounce can spaghetti sauce with mushrooms |
1 tablespoon dried oragno, crushed |
4 ounces mozzarella cheese, shredded (1 cup) |
Directions:
1. Dip eggplant in butter, then in mixture of bread crumbs and salt. 2. Place on greased baking sheet. 3. Spoon sauce atop each slice; sprinkle with oregano and cheese. 4. Bake in hot oven (450) degrees 10 to 12 minutes or till done. 5. Makes 4 or 5 servings. |
