This cake sounds like it would be good. Ingredients:
1 stick butter or margarine |
1/2 c. vegetable shortening |
2 c. sugar |
5 egg yokes |
2 c. all purpose flour |
1 tsp. soda |
1 c. buttermilk |
1 tsp. vanilla |
1 small can coconut (3 1/2 oz. flaked) |
1/2 c. chopped nuts |
5 egg whites beaten stiffly |
Directions:
1. Cream butter, shortening and sugar, add egg yokes and beat well. 2. Sift flour, measure and sift again with soda. 3. Add flour atlernately with buttermilk to the creamed mixture. 4. Stir in vanilla then coconut flakes and nuts. 5. Fold in egg whites. 6. Pour batter into 3 greased and floured 8 inch layer cake pans or 2 9 inch pans. 7. Bake 350 for 25 minutes or until done. 8. Cool in pans for about 5 minutes then turn out on racks. 9. When thoroughly cool frost with cream cheese frosting. 10. ==================================================== 11. Cream Cheese Frosting 12. 1 8 oz. pkg. cream cheese softened at room temp. 13. 1/2 stick butter 14. 1 lb. box powdered sugar 15. 1 tsp. vanilla 16. 1/2 c. chopped nuts 17. Beat cheese and margarine till smooth, add sugar and mix well. 18. Add vanilla and beat until smooth. 19. Spread between layers, over top and sides. 20. Sprinkle chopped nuts on top. |
