Delicious and simple! Ingredients:
1/2 can tomato paste |
28 oz chick peas (garbonza beans) |
1 diced sweet onion |
1 tbsp extra virgin olive oil |
1 1/2 cups vegetable broth |
3 cloves fresh garlic |
15 oz diced tomatoes |
1 finely ground black pepper |
Directions:
1. Saute Onions with Olive Oil until soft. Add Garlic and saute one more minute. 2. Stir in remaining ingredients. On Med-High heat, with lid on, cook until liquid separates from Tomatoes. 3. Turn to low heat and slow cook for 50-60 minutes. Stir occasionally. Should turn into a thicker consistency the longer it slow cooks. 4. Serve with warm Bread and enjoy! |
