Italian Chickpea Soup

Delicious and simple!
Ingredients:
1/2 can tomato paste
28 oz chick peas (garbonza beans)
1 diced sweet onion
1 tbsp extra virgin olive oil
1 1/2 cups vegetable broth
3 cloves fresh garlic
15 oz diced tomatoes
1 finely ground black pepper
Directions:
1. Saute Onions with Olive Oil until soft. Add Garlic and saute one more minute.
2. Stir in remaining ingredients. On Med-High heat, with lid on, cook until liquid separates from Tomatoes.
3. Turn to low heat and slow cook for 50-60 minutes. Stir occasionally. Should turn into a thicker consistency the longer it slow cooks.
4. Serve with warm Bread and enjoy!
