Italian Chicken With Mushrooms and Spinach |

Received this recipe while on vacation. It is pretty enough for a dinner party and quick enough for a weeknight dinner. Ingredients:
1 lb boneless skinless chicken cutlet |
1/2 teaspoon kosher salt |
1/4 teaspoon pepper |
2 tablespoons olive oil |
1/4 cup white wine |
6 ounces fresh spinach leaves |
1 cup sliced mushrooms |
14 1/2 ounces crushed tomatoes |
4 ounces fresh mozzarella cheese (sliced thinly) |
1 garlic clove (finely chopped) |
1 tablespoon butter |
Directions:
1. Season both sides of chicken with salt and pepper while waiting for saute' pan to heat. 2. Place olive oil in pan and swirl to coat bottom. 3. Lightly brown chicken on one side. 4. Turn chicken and add remaining ingredients (except cheese) and cover. 5. Let cook about 5 minutes or until chicken is done. 6. Remove from heat and top chicken with cheese slices. 7. Cover and let stand for a couple minutes until cheese melts. |
