Simple and tasty, this would make a lovely weeknight dish. Ingredients:
3 tablespoons all-purpose flour |
1/2 teaspoon fresh ground black pepper |
4 chicken breast halves, boneless and skinless |
natural olive oil nonstick cooking spray |
6 tablespoons fresh lemon juice |
4 garlic cloves, minced |
4 teaspoons worcestershire sauce |
1 teaspoon italian seasoning |
1 dash hot pepper sauce |
2 tablespoons walnuts, toasted and chopped |
4 teaspoons grated parmigiano-reggiano cheese |
4 wheat sandwich buns, sliced lengthwise |
4 romaine lettuce leaves |
Directions:
1. Combine flour and pepper. Coat chicken with flour mixture, shaking off excess. 2. Spray a 10-inch skillet with cooking spray for 2 seconds; over medium heat, lightly brown chicken on both sides. 3. Combine lemon juice, garlic, Worcestershire and hot pepper sauce and italian seasoning; pour over chicken. 4. Cover; simmer for 15 minutes or until chicken is done. 5. Sprinkle walnuts and cheese over chicken. 6. Arrange lettuce on sandwich rolls; top with chicken. 7. Serve immediately. |
