Italian Chicken and Vegetable Soup |

I haven't made this yet but am looking forward to it! It looks wonderful and so easy to make. Soup lovers... I am looking forward to hearing what you think! Ingredients:
3 tablespoons olive oil |
4 cups cubed boneless skinless chicken breasts |
1/2 a zucchini, chopped into half moons |
1/2 cup diced onion |
1 cup carrot, chopped |
2 (14 1/2 ounce) cans italian tomatoes, diced |
3 1/2 cups chicken broth |
salt and pepper |
Directions:
1. Cook the diced chicken with the olive oil in a huge pot for about 5-10 minutes until done. 2. Add zucchini, onions, carrots and cans of undrained tomatoes. Mix well. 3. Finally add all of the chicken broth to the pot. 4. Let simmer for about 30 minutes. 5. After 30 minute generously season with salt and pepper to taste. 6. Enjoy! |
