healthy, quick and easy Ingredients:
1 1/2 cup chopped onion |
3 cloves garlic, minced |
2 tablespoon olive oil or vegetable oil |
43 1/2 oz diced tomatoes |
1 cup shredded carrot |
3 tablespoons red wine vinegar |
2 tablespoon dried basil leaves |
200 g cooked chicken breast, chopped |
13 1/4 ounces whole wheat spaghetti noodles |
4 tbs parmesan cheese |
Directions:
1. In large saucepan cook onion and garlic in hot oil until tender. Cook and stir for 1 to 2 minutes or until tender. 2. Stir in undrained tomatoes, carrot, vinegar and basil. Bring to boil. Reduce heat. 3. Simmer, uncovered, for 10-15 minutes or until desired thickness. 4. Stir in chicken strips. Cook and stir for 1 to 2 minutes or until heated through. 5. Meanwhile, cook pasta according to package directions. Drain. 6. Toss tomato mixture with pasta. |
