THIS IS NOT THE NORMAL PASTY CANNOLI FILLING- IT IS CREAMY IN TEXTURE ,AND VERY TASTY- YOU CAN MAKE THE SHELLL'S (RECIPTE BELOW )- OR BUY READY MADE SHELL'S -THIS ALSO MAKES AN EXCELLENT FILLING FOR A CAKE
Ingredients:
1-lb of ricotta
1 2 cup of confectionary sugar
2 oz of cream cheese
1 tbsp of vanilla
1 4 cup or more to taste of chocolate bits ( the mini one’s )
a tsp of brandy flavoring
the day before mix the above ingredients, refrigerate over night.- to set.
dough-( shell )
1and 2 3 rd’s cup of flour
2tbsp of sugar
1 tsp of cinnamon
1 tbsp of butter
1 egg beaten with 3 oz of white wine
Directions:
1. MIX ABOVE INGREDIENTS IN A BOWL, MAKE A WELL AND ADD 1 EGG BEATEN WITH 3 OZ OF WHITE WINE
2. KNEAD DOUGH INTO A BALL AND REFRIGERATE FOR 2 OR 3 HOURS, ROLL DOUGH OUT IN TO A RETANGLE, CUT INTO 4 INCH SQUARES , WRAP AROUND CANNOLI TUBES SEAL WITH EGG WHITE, AND DEEP FRY CAN BE MADE 2 DAYS AHEAD OF TIME. ( IF YOU WANT TO MAKE HALF CHOCOLATE FILLING ,-TAKE HALF OF WHITE FILLING RECIPE AND ADD 1OR 2
3. TBSP OF COCOA, AND 1 0R 2 TBSP OF CONFECTIONARY SUGAR.
