Easy bean soup with an Italian feel Ingredients:
32 ounces vegetable broth |
2 (15 ounce) cans great northern beans (rinsed and drained) |
2 medium carrots (sliced) |
1 red onion (diced) |
2 garlic cloves (minced) |
2 tablespoons italian seasoning |
2 cups soymilk |
1 teaspoon salt |
black pepper |
Directions:
1. in large soup pot over medium-low, cook carrots, garlic and onion until starting to soften. 2. add beans, Italian seasoning, vegetable broth, salt and pepper. 3. Bring to boil, stirring often, boil for 5 minutes turn down heat and simmer for 20. 4. Add soy milk, let soy milk warm, then serve. |
