ITALIAN BAKED PEACHES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991. Ingredients:
4 ripe peaches peeled pitted and halved |
4 ladyfingers coarsely crumbled |
2 tablespoons chopped almonds |
1 teaspoon grated lemon peel |
1/2 teaspoon almond extract |
1/4 cup white wine |
1/4 cup packed brown sugar |
Directions:
1. Place 6 of the ripe peach halves in a buttered oven to table dish. 2. Puree remaining peach halves. 3. Combine with ladyfingers, almonds, lemon peel and extract in a small bowl then mix thoroughly. 4. Mound mixture into center of peach halves then drizzle with wine. 5. Sprinkle with brown sugar then bake at 350 for 15 minutes. |
