Italian Antipasta Cold Pasta Salad |

Needed a pasta salad for a party, did not want to make the normal, so since I'm Italian, why not, Got a whole bunch of different things, and put it together, Everyone loved it, Hope you do do Ingredients:
1 package of wacky macroni (tri-color pasta mix) |
2 pints of grape tomatoes |
1 (8 oz) fresh mozzerella, cubed |
1 pkg of smoked mozzerella or provolone cheese cubed |
1 red pepper chopped |
1 green pepper chopped |
1 small red onion chopped |
1 zucchini cubed |
1 small can of sliced black olives |
1 small can of sliced green olives |
hard salami, cubed (i used half of a stick) |
1 to 1-1/2 pkgs of hormel mini peppperoni slices (or used stick and cube) |
dressing |
3/4 cup olive oil |
3/4 cup red wine vinegar |
1/4 cup balsamic vinegar |
2 garlic cloves minced well |
1 tsp salt |
1 tsp pepper |
1 tsp dried basil |
3 tbsp shredded parmesan/romano cheese mix |
1/2 tsp oregano |
1/2 tsp italian seasoning |
Directions:
1. In bowl, mix dressing ingredients all together, cover and shake well to mix flavors (use a jar if you wish) 2. In large bowl, put all other ingredients in 3. Pour dressing over top and mix well 4. Cover and refrigerate overnight 5. Before serving, top with fresh basil |
