It Aint Easy Being Green Chicken Salad |

Served with some corn-on-the-cob and nice crusty bread, this is a great summer meal! Ingredients:
dressing |
1/2 avocado, pitted and peeled |
1/2 cup sour cream |
2 tablespoons fresh lime juice |
1/2 teaspoon minced garlic, more if you really like garlic |
salt and pepper to taste |
salad |
2 cups cooked chicken breast, coarsely shredded |
2 finely chopped green onions |
1/2 teaspoon seeded and finely chopped serrano chilies |
1/2 pound peeled jicama cut into matchstick pieces, optional |
cherry tomatoes, halved |
fresh cilantro, optional |
6 cups mixed greens, your choice |
Directions:
1. In a blender or food processor, combine the dressing ingredients. 2. Blend until smooth. 3. In a large bowl, combine chicken, jicama, onions, chilies, and cherry tomato halves. Also add cilantro, if using. 4. Toss to mix well. 5. Add dressing and toss again. 6. Divide the greens among 4 plates. 7. Top with chicken mixture and serve. 8. Serve with crusty bread and corn-on-the-cob. |
