Israeli Veggie And Avocado Salad |

I love this blend of mixed vegetables. It makes a perfect summer salad. Great for entertaining or taking along on a picnic. Ingredients:
2 cups each of your favorite diced vegetables. |
tomatoes (seeded) |
cucumber (seeded) |
red onion |
green onions |
avocados |
bell peppers (whatever color you prefer) |
radishes |
dill pickles |
1/2 cup fresh parsley, chopped |
1/4 cup olive oil |
4-5 tbsps. lemon juice |
salt and pepper to taste |
Directions:
1. Dice all of the vegetables and place them in a bowl with freshly chopped parsley. 2. Drizzle with olive oil and lemon juice and season with salt and pepper. 3. Toss and serve. 4. It doesn't get much easier than this. |
