Israeli couscous is small and round like tapioca size pasta. comes in whole wheat also Ingredients:
1 lb dry israeli-style couscous |
1 large onion chopped |
1 tbs. olive oil |
2 cups chicken broth |
1/2 cup dried chopped cranberries, apricots or raisins (optional ) |
1/2 cup chopped nuts ( almonds, pecans etc. also optional ) |
chopped fresh parsley for garnish |
Directions:
1. In saucepot, saute the onion in the oil until tender. 2. Stir in the couscous and cook and stir until pale golden. 3. Cover with the broth and bring to a boil and cook and simmer about 10 minutes or until couscous has absorbed the liquid. 4. Stir in the cranberries and nuts. 5. Remove from heat and let stand covered 10 minutes. 6. Fluff with fork 7. Season with salt and pepper. |
