I found this easy recipe on-line and made it for a small luncheon I hosted (I doubled the recipe). Everyone commented on the yummy flavors so I thought I would share the recipe. The sumac powder was difficult to find. Read more . I purchased it from a local Middle Eastern grocery store. This goes great with hummus and pita chips. Ingredients:
2 medium roma tomatoes, cubed |
1-lb. english cucumber, cubed |
1/2 medium red onion, cubed, or 4 scallions, finely sliced (i use red onion) |
1 bell pepper, cubed |
3 tbsp finely minced fresh, flat-leaf parsley |
juice of half a lemon |
2 to 3 tbsp olive oil |
1 1/2 tsp sumac powder |
salt and pepper, to taste |
1/2 to 1 cup crumbled or cubed feta cheese |
optional additions: 1-15 oz can chickpeas, drained and rinsed, 1/2 cup coarsely chopped olives, 1 to 2 tbsp finely minced mint or dill. for a thicker, sesame-coated flavor, whisk in a couple tablespoons of tahini. |
Directions:
1. Place chopped veggies in a large bowl. Set aside. 2. Whisk together parsley, lemon juice, olive oil, sumac powder, salt and pepper in a small bowl. 3. Toss mixture with veggies. 4. Top with feta. |
