Quick, refreshing, Mediterranean style salad than can be easily adjusted Ingredients:
2 medium roma tomatoes, cubed |
1 lb english cucumber, cubed |
1/2 medium red onion, cubed |
2 scallions, finely sliced |
3 tbsp flat leafed parsley, finely minced |
juice of 1 lemon |
2 or 3 tbsp evoo |
3/4 tsp sumac powder |
salt and pepper to taste |
optional |
2 tbsp tahini - for the dressing |
drained chickpeas |
crumbled feta |
rough chopped kalamata olives |
anchovies |
cubed red/yellow/green bell pepper. |
fresh minced mint |
fresh minced dill |
Directions:
1. In a small bowl, whisk EVOO, Sumac powder, (tahini?), lemon juice, and parsley. 2. Toss vegetables in a bowl, drizzle dressing over veggies, and lightly toss again. 3. Serve with some pita bread or good Italian hard bread. |
