2 large tomatoes, diced |
2 cucumbers, diced |
1 large onion, diced |
4 tablespoons parsley, finely chopped |
1/2 lemon, juice of |
1/4 cup olive oil |
salt and pepper, to taste |
chopped fresh mint, to taste |
Directions:
1. Combine the tomatoes, cucmbers and onions in a bowl. 2. Pour lemon juice over vegetables. 3. Add remaining ingredients and toss well before serving. |
