Just like my MIL makes. Ingredients:
2 lbs red potatoes, unpeeled |
1 1/2 cups carrots, cooked and diced |
1 cup peas, cooked |
1/4 cup chopped red onion |
1 dill pickles, diced |
3 tablespoons chopped parsley |
3/4 cup mayonnaise |
1 hard-boiled egg |
1 kirby cucumber, peeled and diced |
salt and pepper |
Directions:
1. Boil potatoes. Simmer 25 minutes. Peel and dice. 2. Combine with remaining ingredients. |
