Israeli Potato Salad

Just like my MIL makes.
Ingredients:
2 lbs red potatoes, unpeeled
1 1/2 cups carrots, cooked and diced
1 cup peas, cooked
1/4 cup chopped red onion
1 dill pickles, diced
3 tablespoons chopped parsley
3/4 cup mayonnaise
1 hard-boiled egg
1 kirby cucumber, peeled and diced
salt and pepper
Directions:
1. Boil potatoes. Simmer 25 minutes. Peel and dice.
2. Combine with remaining ingredients.
