Sweet potatoes that taste like they came from the Hawaiian Islands. A great side dish for ham or pork. Ingredients:
2 - l lb. cans sweet potatoes, drained |
1 can (8 oz) crushed pineapple in juice, undrained |
1 large firm, but ripe, banana, sliced |
1/3 cup golden raisins or chopped dates |
1/4 teas. ground nutmeg |
1-3/4 cup miniature marshmallows |
Directions:
1. Cut sweet potatoes in to bite size pieces and place in large bowl 2. Add the pineapple, including the juice, the banana slices, raisins, and nutmeg. 3. Toss gently to mix. 4. Coat a 2-qt. casserole dish with non-stick cooking spray. 5. Spread the mixture evenly in the dish. 6. Arrange the marshmallows over the top. 7. Bake at 350 degrees for 35 to 40 minutes or until the edges are bubbly and the topping is golden brown. 8. Serve Hot |
