We like to eat this rice when we are having a tropical meal. This recipe comes from Burt Wolf's Menu Cookbook . I usually just put all the ingredients in my rice cooker and just add a little extra water but it can be cooked on the stove as described below. Ingredients:
1 3/4 cups water |
1 cup white rice |
1/2 teaspoon salt |
1 tablespoon butter |
2 tablespoons fresh lime juice |
1 garlic clove |
2 teaspoons lime zest |
Directions:
1. Bring water to a boil in a saucepan. Add the rest of the ingredients and simmer, covered, for 20 minutes. Remove garlic clove before serving. |
