Ingredients:
1 tablespoon butter or margarine |
2 cups chopped celery |
1 small onion, chopped |
2 garlic cloves, minced |
4 cups water |
2 chicken bouillon cubes |
1/2 cup raisins |
1 tablespoon brown sugar |
1 teaspoon curry powder |
1/4 teaspoon salt |
1/4 teaspoon ground cinnamon |
1/4 teaspoon pepper |
1 1/2 cups uncooked basmati rice |
1/2 cup chopped pecans |
1/2 cup chopped apple |
Directions:
1. Melt butter in a large saucepan; add celery, onion, and garlic, and saute until tender. Add 4 cups water and next 7 ingredients; bring to a boil. Stir in rice; cover, reduce heat, and simmer 20 minutes. Remove from heat, and let stand 10 minutes. Stir in pecans and apple. 2. Note: Basmati rice is a fine-textured long-grain rice. It can be found in Indian or Middle Eastern markets or the Indian or Middle Eastern departments of supermarkets. |
