Cooking Light, May 2004 Ingredients:
2 1/2 cups water |
1 cup uncooked long-grain rice |
1/2 cup chopped dried pineapple |
2 teaspoons butter |
1/2 teaspoon grated lime rind |
1/4 teaspoon salt |
1/4 cup chopped fresh cilantro |
1 tablespoon chopped green onion |
2 1/2 tablespoons fresh lime juice |
Directions:
1. Bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt). 2. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. 3. Remove from heat; stir in cilantro, onions, and juice. |
