A delicious meal that I saw on another web site; a quick meal for the entire family. I adjusted a couple of things. Ingredients:
16 ounces pork tenderloin, lean |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 teaspoon chili powder |
1/2 teaspoon ground cumin |
1/2 teaspoon cinnamon |
2 teaspoons olive oil |
1/4 cup brown sugar, packed |
1 tablespoon fresh garlic, finely chopped |
1/2 tablespoon tabasco sauce |
Directions:
1. Preheat oven to 350 degrees Fahrenheit. 2. Stir together salt, pepper, chili powder, cumin and cinnamon. 3. Coat the pork with the spice rub. 4. Heat 1 tablespoon of oil in a 12 inch skillet, over relatively high heat, and brown pork, turning every 30 seconds for 4 minutes. 5. Stir together brown sugar , garlic, and tabasco and pat onto top of the tenderloin. 6. Place pork in roasting pan and cook for 20 minutes. |
