Tropical fruit chunks are blended with coconut milk and lots of spinach for this refreshing on-the-go breakfast or snack. Ingredients:
2 cups so delicious® dairy free sugar-free vanilla coconut milk |
2 scoops dairy-free vanilla protein powder |
1 cup frozen honeydew melon |
1 cup frozen mango |
1/2 frozen banana |
2 cups packed fresh spinach |
2 teaspoons chia seeds |
Directions:
1. Pour coconut milk into a blender, and add protein powder and chia seeds while mixing for a few seconds. Let the mixture sit for 5-10 minutes to allow the chia seeds to gel. Add fruit and blend. |
