Ingredients:
3c sweetened flaked coconut |
1c unsalted macadamia nuts, chopped |
2/3c sweetened condensed milk |
1tsp vanilla |
2 egg whites |
pinch of salt |
6oz bittersweet or semi-sweet chocolate, chopped and melted. |
Directions:
1. Oven 350F 2. Place coconut and chopped macadamia's on baking sheet. Bake until lightly toasted, stirring often, about 12 mins. Cool. 3. Line 2 large cookie sheets with parchment paper, grease parchment. 4. Combine condensed milk and vanilla in a large bowl. Mix in coconut and nuts thoroughly. 5. Using an electric mixer beat egg whites and salt until stiff but not dry. 6. Fold egg whites into coconut mixture. 7. Drop by rounded tablespoon onto prepared cookie sheets. 8. Bake until macaroons just turn golden brown around the edges, about 14 mins. Cool completely on cookie sheets. 9. Line another cookie sheet with wax paper. Dip cookie bottoms in melted chocolate. 10. Place cookies chocolate side down on prepared sheet. Chill until chocolate is set. |
