All spicy and seasoned, here's a modern take on a classic for your make-often recipe box. Meat is moist and tender every time and the flavor is delicious! Add or omit spices to your own personal taste.
Ingredients:
1 cup soy sauce
1/2 cup olive oil
1/2 cup balsamic vinegar
2 tablespoons fish sauce
1/4 cup lemon juice
1 teaspoon cumin
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
2 lbs chicken breasts or 2 lbs beef chuck, cut in 1 inch cubes
2 medium onions, cut in quarters
1 green mango, cut into chunks
1 green squash or 1 yellow squash, cut into chunks
1 cup fresh whole mushroom, cleaned
1 red bell pepper, cut into chunks
Directions:
1. Soak skewers in water for 20 minutes before grilling (to prevent burning during grilling).
2. Combine first ten ingredients in a container with a lid.
3. Combine well.
4. Add meat cubes and vegetables.
5. Gently stir to distribute the marinade over all.
6. Cover and refrigerate at least 2 hours.
7. Place meat and vegetables on skewers, brush with marinade and broil over hot coals 15 minutes or until cooked. Turn skewers and brush with marinade during the cooking process.
8. Serve over seasoned rice.
