Another Sandra Lee recipe. My s. loved it. So refreshing. I used fresh mango, but the jarred is easier if you want really fast, semi-home made.
Ingredients:
1/4 cup fresh lime juice
2 tablespoons honey
1 tablespoon red wine vinegar
1 teaspoon bottled garlic, minced
1/4 cup olive oil
salt and freshly ground black pepper
2 cups mangoes, cubed (may used frozen or defrosted or jarred)
1 1/2 lbs romaine lettuce, chopped
1/2 seedless cucumber, cubed
Directions:
1. Whisk together juice, honey, vinegar, and garlic. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.
2. Toss together mangoes, romaine, and cucumber with dressing, to taste.
