I make these at least once a month..they do go fast tho. Ingredients:
2 1/4 cups sifted flour |
1 teaspoon baking powder |
3/4 teaspoon salt |
1/3 cup butter or 1/3 cup margarine |
1/2 cup peanut butter |
1 cup sugar |
1 egg |
1 cup crushed pineapple |
Directions:
1. Sift together flour, baking powder and salt. 2. Cream butter or margarine and peanut butter with the sugar until light and fluffy. 3. Add egg and pineapple. 4. Stir in flour mixture. 5. Form into oblongs, using one heaped tsp. 6. to each cookie. 7. Bake in a 375 degree oven for about 10 minutes. |
