This is a very flavorful bean salad that I tried once and fell in love with. Prep time depends on how much effort you want to put into it. Ingredients:
6 cups cooked black beans |
3 cups cooked corn |
1/4 cup chopped cilantro |
1 chopped red bell pepper |
8 scallions, chopped |
1 cup italian dressing |
2 teaspoons cumin |
1/2 tablespoon black pepper |
1 tablespoon salt |
2 teaspoons dried oregano |
2 limes, juiced |
Directions:
1. Mix all ingredients in large bowl. 2. Let rest for 2 hours under refigeration before serving. |
