This recipe is from an old horse-show buddy from years ago. She was a horse-show Mom and always brought wonderful food and snacks to the horse shows. These cookies disappeared at the speed of light. Read more . I have been making them for years and always think fondly of her. You must eat about a half-dozen dunked in ice cold milk. Yummy !
Ingredients:
4 cups flour, all-purpose
2 tablespoons ginger
4 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon kosher salt
3/4 cup butter softened
3/4 cup margarine softened
2 whole eggs
2 cups sugar
1/2 cup molasses
Directions:
1. Cream butter and margarine with sugar until light and fluffy, add eggs and molasses and mix well. Mix dry ingredients together in a separate bowl and add to butter mixture a half cup at a time until incorporated. Mix well. Chill at least three hours or overnight. Form into small balls and roll in sugar. Place on baking sheet and bake for around 15 minutes at 350-375 deg.
