This will feed 2 fatkids or like 4 regular folks depending on appetite. I threw this together this morning with the pits n pieces left from last payday's grocery adventure! You can always make substitutions and it happens to taste great with honey mustard sauce drizzled on top! Read more !
Ingredients:
sausage - i actually used a bratwurst cut from it's casing
4 eggs
splash of milk
cheese - i used 2 slices of american cheese torn into strips
1/2 bag frozen steak fries - you could use hashbrowns or whatever you have
seasoned salt
pepper if you like
Directions:
1. Brown the sausage in a deep skillet (preferably oven proof)
2. once that's cooked dump in the steak fries and stir to get them coated with greasey goodness
3. let the potatoes brown, stirring a couple of times for even browning
4. whisk the eggs, milk and seasonings together and pour over the sausage and potatoes - layer cheese on top
5. cover and let cook until eggs are mostly set
6. move to the broiler to cook up the tops of the eggs and brown the cheese - if not using an oven proof pan just keep the lid on a while longer til the eggs cook
7. cut into wedges and serve hot
