Ingredients:
2 quarts water, plus extra for rinsing
1 cup plain not iodized, salt
1 lb dark brown sugar
1/4 cup lemon juice
1/4 teaspoon garlic powder
1/2 cup soy sauce
salmon, prepared as desired, leaving skin on
wood chips
Directions:
1. In suitable container, combine all ingredients, except salmon and wood chips. Mix well, add salmon, cover and refrigerate 8 to 12 hours. Rinse under cold water and pat dry to touch. Arrange in smoker, skin side down, and smoke 8 to 12 hours, adding more wood chips every 30 minutes.
