From my collection of old recipes. It was submitted by Robert J. Smith. Ingredients:
2 quarts water, plus extra for rinsing |
1 cup plain not iodized, salt |
1 lb dark brown sugar |
1/4 cup lemon juice |
1/4 teaspoon garlic powder |
1/2 cup soy sauce |
salmon, prepared as desired, leaving skin on |
wood chips |
Directions:
1. In suitable container, combine all ingredients, except salmon and wood chips. Mix well, add salmon, cover and refrigerate 8 to 12 hours. Rinse under cold water and pat dry to touch. Arrange in smoker, skin side down, and smoke 8 to 12 hours, adding more wood chips every 30 minutes. |
