These muffins cook up moist with a crunchy, tasty top ! Ingredients:
3 cups flour |
1 1/2 cups sugar |
1 teaspoon salt |
4 teaspoons baking powder |
2/3 cup vegetable oil |
2 eggs |
2/3 cup milk |
2 cups blueberries |
1/2 cup sugar |
1/3 cup flour |
1/4 cup butter, cubed |
1 1/2 teaspoons cinnamon |
Directions:
1. Heat oven to 400 degrees. 2. Muffins- Combine the flour, sugar, salt and baking powder. 3. Mix in vegetable oil, egg and milk. 4. Fold in the blueberries. 5. Grease muffin tin or use paper liners. 6. Topping- Mix sugar, flour, butter and cinnamon. Mix with fork and sprinkle over muffins. 7. Fill muffin cups right to the top and sprinkle with crumb mixture. 8. Bake 20-25 minutes. |
