Irresistable Chocolate Muffins |

Ingredients:
2 cups all-purpose flour |
1/2 cup unsweetened cocoa powder |
1 1/3 cups dark brown sugar (packed) |
1/2 teaspoon baking soda |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 1/4 cups low-fat buttermilk |
1 egg |
2 tablespoons applesauce |
1 teaspoon vanilla extract |
1 cup milk chocolate chips |
1/3 cup chopped pecans |
Directions:
1. Preheat oven to 350 F and prepare your muffin tin by spraying with nonstick spray. 2. In a medium bowl combine the flour, cocoa powder, brown sugar, baking soda, baking powder and salt and mix with a whisk. 3. In a large bowl combine the buttermilk, egg, applesauce and vanilla. 4. Add the wet ingredients to the dry and mix to combine; add the chocolate chips and pecans and fill each muffin cup about 3/4 full. 5. Bake for 20-25 minutes (for regular sized muffin tins or about 13 minutes for mini muffins) or until a toothpick inserted comes out clean. |
