Another comfort food. Green beans sauteed with onions and bacon. What could be better. Pork Fat Rules! (as Emeril always says) Ingredients:
1 pound fresh green beans, snapped |
1/2 pound bacon |
1 clove garlic |
1 large onion, sliced into rings |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. 1. Fry bacon in a large skillet until crsp. Drain, break into pieces and set aside. 2. 2. Pour off excess drippings and saute onion rings in remaining drippings. Cook onions, stirring ocassionally, over medium heat until they are golden brown. Remove and set aside. 3. 3. Put about 1 tablespoon of olive oil into the skillet. Pour in snapped green beans and saute for about 8-10 minutes. They should remain crisp but cooked through. 4. 4. Pour into serving bowl and top with onions and bacon. |
