Iron Skillet Fried Squash |

This is another old family tradition. Originated before I was born. (and that is a long time ago) Soft, mellow, country comfort food. Ingredients:
5 medium summer squash, peeled and sliced 1/4 inch thick |
1/2 large onion, sliced 1/8-inch thick |
1 tablespoon bacon drippings |
salt and pepper, to taste |
Directions:
1. Peel and slice squash 1/4 inch thick. See Photo 2. Slice onions about 1/8 inch thick. 3. Place both in iron skillet or saute skillet, cover with water and cook covered on medium high heat about 15 minutes, until tender. 4. Drain in collander See Photo. Return to skillet on low heat to drive off excess moisture. Add salt and pepper to taste. See Photo 5. Add 1 tbsp of bacon drippings, mix in, turn heat to medium high, pat down into skillet and let fry until slightly crispy. See Photo 6. Serve right out of the skillet. |
