Irish Vegetables (Diabetic) |

From the The Complete Diabetic Cookbook by Mary Jane Finsand. You can either simmer the veggies or steam them. Ingredients:
1 bay leaf |
1 cup water |
2 tablespoons wine vinegar |
1/2 cup corn |
1/2 cup broccoli floret |
1/2 cup carrot |
1/2 cup cauliflower floret |
1/4 cup pimiento, chopped |
salt (optional) |
fresh ground pepper |
Directions:
1. Combine bay leaf, water, wine vinegar in medium saucepan. 2. Bring to a boil. 3. Either add vegetables to the water and simmer until vegetables are tender. 4. OR 5. Place vegetables in a steamer basket, cover, and steam vegetables until tender. 6. If you simmer, drain, remove bay leaf. 7. Add salt and pepper. |
