I made this for the first time on St. Patrick's Day 2007 ......... I'll make it again next St Patrick's Day - or sooner! Ingredients:
1 1/2 tablespoons butter |
1 1/2 tablespoons olive oil |
2 lbs beef, cut into 2-inch cubes |
1 1/2 cups tomato sauce |
1 cup beef broth |
1/2 cup red wine |
1 teaspoon salt |
1/2 teaspoon pepper |
1/4 cup finely chopped fresh parsley |
1 bay leaf |
3 large potatoes |
3 large carrots |
3 onions |
3 stalks celery |
Directions:
1. Heat butter & oil in a heavy skillet; brown beef cubes & transfer to crockpot. 2. Add liquids & seasonings. 3. Cut veggies into chunks and add to the crockpot. 4. Cover & cook on low for 9 hours; thicken sauce with cornstarch, if necessary. |
