Irish Stew (Can Be Vegan) |

To make vegan replace the chicken with seitan. Ingredients:
250 g steak, diced |
1/8 cup sunflower oil |
1 cup onion, chopped |
60 g parsnip, chunked |
1/2 turnip, chunked |
1 carrot, chunked |
1 potato, chunked |
2 1/4 cup water |
1/4 cup soy sauce |
1/4 tsp basil |
1/8 tsp black pepper |
1/8 tsp rosemary |
1/8 tsp thyme |
1 tsp ginger, grated |
3 1/2 tsp tapioca starch |
3 1/2 tsp cold water |
Directions:
1. Saute the onions (and chicken, if not vegan) for 5 minutes. 2. Add the root vegetables and saute for 5 more minutes. 3. Add water and seasoning and bring to a boil. 4. Simmer for 25 minutes, then add the seitan (if making vegan). 5. Stir together the tapioca and water to form a paste, then stir it into the simmering stew to thicken it. 6. Garnish with chopped parsley and serve. |
