This is a fantastic Irish Stew!! Enjoy!! Ingredients:
1 lb lean lamb, cubed |
2 medium onions, sliced thinly |
2 lbs potatoes, sliced |
salt & freshly ground black pepper, to taste |
1 tsp.dried thyme |
10 ounces lamb stock |
chopped fresh parsley |
Directions:
1. Preheat oven to 350°F 2. Put alternate layers of lamb, onion and potato in a casserole, season with salt and pepper and thyme, finishing with a layer of potato. Pour lamb stock over top. 3. Cover and cook for about 2 1/2 hours. 4. Serve, sprinkled with parsley. |
